Is there any real risk in setting virus scanners to hardest heuristic
filtering and deleting?

Obiously you could end up with an unusable sytem in the event of a
false positive on a system file, or an unusable program in the event
of a false positive on a program file or non-system DLL. Or you could
lose important data in the event of a false positive on a data file.

And since you automatically deleted the file, there won't be a
terribly easy way to get it back, necessarily.

The greatest risk is a higher rate of False Positive declarations.
The downfall is also higher resource utilization.
