Hey, anyone know why my "System" process continually jumps from 33% or so to
100% and back down to like 29% and back up to 100%?
Continually?
I'm dieing here.

Check your system for unusual processes, by using the Process Explorer
from
www.systernals.com
They offer it for free, for the Windows 9x and the NT and derivates
versions.

since other people seem to have covered the malware angle, i'll go for
the more mundane...

check your memory usage... ignoring the possibility of malware, what
you describe sounds like thrashing - a state where your computer spends
more time/cpu resources paging things in/out of physical memory than it
does doing useful work... too many things open at the same time, too
little ram, something eating a whole lot of memory can all contribute
to the problem...
