Help with setting up best storage configuration

I'm looking for some help on how best to setup my SSD's and my HHD's.

Motherboard - GIGABYTE GA-X79-UD3 LGA 2011 Intel X79 SATA 6Gb/s

I have two SSD's
1. Patriot Torqx 2 32GB
2. INTEL 530 series 120GB

and five HHD's
1. Seagate Barracuda 7200.14 ST3000DM001 3TB
2. Hitachi HDS72101 1TB
3. Seagate ST950032 5AS 500GB
4.Western WD10EACS 1TB
5. Western WD10EADS 1TB

I was thinking of installing windows 7 on the 120GB SSD, I don't know what I should do with the 30GB. My issue though is I previously had a 30GB SSD with just the OS on it and it still filled up with I don't know what. I removed hibernation which helped but what else can I do so the 120GB doesn't do the same? Also I've heard things about using the 30GB for caching but I'm still unsure on the topic. Is it something I should do still even with 120GB? Can I?

As for the HHD's can I RAID them all? Should I? Also what formatting should I use? I've always been confused about that
