I took a picture..A friend of mine has a poem she would like to go in
the picture. How can I accomplish this and edit it so that the text is
aligned properly in the center with the right font size and color

Easy. Open the photo, click on 'Text...' in the 'Image' dropdown menu,
enter the poem in the text field box, choose font, color,
left/center/right alignment - done! The text box can be click-n-dragged
anyplace within the image.

I did that. I need something that I can add text to an image as easy as
entering and editing text in a text editor..

I'm guessing you mean just point the cursor on the image and start typing?
And the ability to move the annotation afterwards?

I'd like the same thing. I really don't like having to type the text in a
separate box.

That's the way ArtWeaver works:

http://www.artweaver.de/index.php?en_version

Click the text tool, set your parameters in the context toolbar at the
top of the screen, click the image to place the cursor, and start
typing. Click Apply if you're satisfied with it, Cancel if not. Then
choose the Move tool in the tool dock and place it where you want it. No
fussing with textboxes or selections.
