Help with design

I need to know if there is a way to create a database by using more then one
catagory? For example I have 3 with using Suspect/Hostage which include their
demographics. How would I do this in a table/form?
Example: Name, Age, Race, Height, Weight, Color Eyes, DOB are in all.
 
I'm not sure what is the question. What do you mean "more than one category"?
Databases are intended to keep track of any number of "categories" of
entities.
