Help! What type size, quality, and or brand of memory should I use, and why?

I've been surfing around the web reading a bunch of different reviews
of specific memory modules, but have yet to find a definitive guide on
how to pick memory a memory module to the processor and chipset.

Here's my problem. I want to build a series of pc's with Intel 2.0Ghz
northwood 400FSB 512K cache CPU's and a Intel 865PE chipset (the EPoX
EP-4PDA5+ to be exact).

I'm planning on running Linux and using them for Video & Multimedia
playback.

I want to be able to get the most performance and stability without
buying into technology I won't be able to utilize.

Can anyone help or direct me to a site that will?

The answer is probable right under my nose but I'm a bit lost.
