I installed NET 2.0 some time back, and noticed tonight in
"Add/Remove" that I still have 1.1 installed. I assume it's safe to
remove that,
but I wanted to check first - ?

Maybe; it depends. The numbers in this case actually denote DIFFERENT
programs. In ohter words, 2.0 does not include and superced 1.1, etc..
It's very possible that one of your programs uses 1.1.
Test first by renaming the folder to something else, like adding "OLD"
to the end of it or somethng, so it won't be found by anything using it.
Then try all your important software. If something needs it, it will
complain and tell you you need 1.1 and most often they suggest a link to
download it.
If that happens, rename it back and leave it installed.
But if you never get any error messages after a week or so, then
you're probably safe in uninstalling it.
