Save it as a web file; that will separate out the image into its own file.
Then use whatever image editing program you have to load/resave it to the
format you want.

What do you need to change? The image or the whole document?

If the latter, your best bet is to install the trial version of SnagIt and
print the document to its 'printer' driver, configured to output to jpg
format.
