get value from cell next to that of searched text

I have some tables where there is a veriable in a cell next to searchable
text. So if I search for the desired text and want to take the value of the
cell to the left of it what would that formula look like?
 
That gives good information for a single sheet, but what if I want to do it
for multiple sheets at a time?
