Exchange Custom fields, maybe?
Or just in the descriptions field...

Just curious, what ill legal affects could result by including a users
gender? Isn't this a common question asked on an application, anyhow?
Assuming the field is filled out properly, I don't see what harm could
come. Then again, I'm also not a lawyer ;-).
