The 4 photo galleries that are standard in FrontPage don't offer a
lott of flexibility, and the Slide Show version doesn't play nice in
Safari and Firefox (Hey - where are my arrows, and why are there so
many thumbnails!)

Someone has to have created FP add ins that work better. Any
recomendations?

It's not a FP add-in but I can recommend WebAlbum Generator.
http://www.ornj.net/ (Free).

You create the album first and then add the pages to your FP site.

MS Expression Media also creates albums (and is great for managing your
photos/images) and you can download a trial at
