When a recipient views my note, I would like my name, not my email address to appear. How can I achieve this?

In a note? Or do you mean, in a mail message? Change your display name
settings in your mail account. Although of course they will be able to find
your email address - and your mail server or theirs may strip out the
extraneous info and just display the e-mail address. Most won't be a problem
tho.
