If I have multiple email accounts, can I make it such that the From address
is automatically generated depending on what folder I am in ?

Alternatively, can I make it such that a particular contact is always from a
specified account ?
 
What are you trying to do in reality? You do realize the From address is purely cosmetic and has no relationship to the sending account, right?

reading.
