How do I get the proper email address as the "from" element in email
generated via the form option?
 
Not possible, however you must have a field on the form for the user to insert their email address,
then under Form properties, you set the option to use this address as the Reply To address. When you
receive an email from a form, you would click on reply to sender, and you will then see the sender
email address if they inserted it.

The "nobody" is bugging my recipients - is there a script that can be written
to get a name in the field?
 
Your web host controls the "nobody" so you will need to have your host change the name. If you want
complete control, then you can not use the FP form handler, you will have check with you host to see
what you can use.
