stop people adjust any of the formatting parameters
around the sub datasheet, ie grid lines , fonts, etc

You can't.

Instead, give them a Continuous Form, which can be made to *look* like
a datasheet. If you set up Access Security you can deny them design
privileges on the form, and they'll have no way to change it.
