formatting extends to entire document rather than just selection

New user to Word 2003, yet this occurs with all users. When I select text to
modify the formatting, the format change occurs throughout the document
rather than just the selected text. Correctible with an "undo" but something
seems strange. Is there a setting I don't have right?
