Format of name in email messages

I have every name in my Ouitlook 2003 address book formatted to display as "last name, first name," which automatically, I believe, sets up the email address to display as "first name last name (email address)". In several cases, however, the email display name shows up as "last name, first name (email address)'. No matter what I try - manually changing it, deleting and replacing, etc., I cannot get the specific names to change the email display formatting, which of course shows up the same way in the address section of the email itself. Any ideas and thanks

Display where?
The sort order of the Outlook Address Book has no effect on how the Display
Name is formatted.
Look at the "Display As:" field in the Contact Record.
