Some of my workstations are at remote sites connected
through a VPN. I know that you said to point everyone at
our future DNS server, but do I include a second DNS
server for when connectivity is lost with the main office
This happens very seldom. If so, do I use the ISP's dns
server?

Adding a second alternate dns address for an outside dns (non-domain dns
server like an ISP) can cause name resolution problems in and of itself so
would not recommend it (you can set up a Forwarder on the dns server to
forward out though if this is needed with no problem). Dns doesn't take
much horsepower, and if you have a 2k server (file, print, etc) at those
sites you could add a secondary zone to them for those times when the main
server is down or even for them to use day to day.
