I have used the folder properties menu to assign a single picture to given
folders but have found that the image is now automatically assigned to many
other folders as well. Some of these can no longer be changed by selecting
restore default in their individual folder properties and I no longer know
how to get rid of the picture. Can anyone help?

try turning on the "hidden files" from Tools>folder options>View
and look for image files in those folders.

To avoid such confusion next time, name the image you want the folder to
have
as folder.jpg the folder will have that image automatically without you
having to customize it..

If you have explorer set to cache thumbnails, folder pictures can remain as 'ghosts' after the
setting has been removed. So first thing to do is open a command prompt and type:

cd\<enter>

then:

del /a /s thumbs.db<enter>

Then, to delete the setting that assigns a folder picture, you have several options. If you don't
mind losing all saved folder views, use the 'Reset All Folders' option from the 'View' tab of the
Folder Options dialog. If you want to be more selective in your deletion, post back for more info.
