"Fixed" table width

If i make a table of 750px wide, and insert a photo of 900px wide into it,
the table resizes regardless the fixed tablesize.
Can this be avoided, so the table stays 750px wide and shows only the first
750px of the 900px photo ?

No, the table width is only a minimum setting, and will always adjust to fit
the width of items insert that do not wrap.

You need to resize your photo in a image application to the size want, which
will also reduce the file size for faster downloads, then import the image
back into your current open FP web.

I think the table will expand to fit the largest element in it despite
"fixing" it at 750 px. That is a minimum value and the nature of tables.

The only way to show a "partial image" is to apply it as a cell background image

Don't know about a partial, but you can set the image width to 100% and it
will resize to the table's size.
