I never "backed-up" the pst file at all. I merely copied it from its
location on my old C drive to my mass storage G drive. No selections,
subsetting, etc. took place.
All of my many, complicated Inbox subfolders are showing up. But there is
no contact subfoldering at all.

Then you are either opening the wrong PST file or you failed to back up your
PST file correctly.
Opening any PST file will show all the data it contains. Are you using a
view that provides a comprehensive view of your entire folder hierarchy,
such as Folder List view?

I did open it (not import) -- sorry for the imprecise wording. No
subfolders
are showing under the main Contact folder.

My old hard drive died, but I got my entire Outlook pst file onto a
storage
drive. Now when I bring that into my new Outlook, I have all of my old
emails and sub-folders, but my many Contact sub-folders are nowhere to be
seen.
