File modified date/accessed date

I am using a Windows 2000 machine, our file server is on
a Mac os x machine, when i open up any files from my
machine that live on the server, the modified date always
changes to the current date, even though i do not make any
changes. This also happens to other users when they access
file from their machines(mostly xp pro), why does this
happen, does anyone know?

Depends on the application. For example, the mere act of opening an
Access database, even if you make no changes, updates the date/time
stamp. Depends on *how* the app opens the document.
