I want to install a third HDD onto my PC which already has two HDDs.

Can I just get another cable with three plugs on it and add it to the
existing two, or is there some other diabolical trick that I no not of?

You can't add a 3 connector cable to the mix since an IDE (ATA) drive is
limited to Master and Slave only on each channel. If you don't have two
devices (CD & DVD) drives hooked to the secondary IDE channel you can add a
3rd drive there. Make it the Master and the CD or DVD drive the slave on
that channel.

OR you can add another IDE controller card (PCI adapter card) and plug in
your hard drive to it set as Master or Single drive depending on the drive
you have purchased.

The next thing you need to consider, do you have space to install the drive
in the computer's case and if so, is your power supply strong enough to run
the additional drive?

This is impossible--no such cable exists or could exist. Two devices
per IDE cable.

However there might be another plug on the motherboard to plug another
cable into. Most motherboards support a total of 4 devices. Note
that your CD or DVD is one of those 4.
