Exchange profile Backup

Hi,
I have Outlook synchronized with an Exchange mailbox.
I have to do a backup of ALL the mails in the mailbox, but I have to do
it without accessing to Exchange server-side.

How can I do this?

Create a PST or if you synchronize your mailbox because you travel, it
creates an OST file which allows you to work offline.
 
unless done correctly, creating a pst will delete all mail from the server.
Using offline file is better. if outlook 2003, use cached mode.
