Exchange/Outlook email

I'm using Exchange 2007/Office Pro 2007 for my email. A staff member sends
and email to a customer and every - and ' gets replaced with a ? when the
customer views the message. I've had the same staff member send me an email
internally and using my external yahoo account and things look great. What
could be causing this to happen with the customer?
