Exchange 2000 email issue

I have an exchange 2000 server. I wanted to know if there was a way
to recover mail deleted by a user from his/her outlook client deleted
folder. I know how to recover the e-mail through the outlook client,
but wanted to know if there was a way on the server side without
user's knowing what I am doing. This is just incase there is a
lawsuit and the courts need me to retrieve all emails per certain
person(s).

For that you will need an email archiving product.
