Excel Workbooks and Worksheets

You can ask for 255 sheets as a maximum default BUT you can actually add as
many as you want manually, based upon the RAM you have on your computer.

This is only limited by available memory, per Excel help.

From Help>Index "specifications"(no quotes)>Worksheet and Workbook
Specifications you will find that the number of worksheets in a workbook is
limited by your available memory.

The default number is 3. I believe the most you can set under
Tools>Options>General "sheets in new workbook" is 255.
