Excel 2003 Updates Automatically

I am having dificulties with Excel 2003 since it
automatically updates documents even when I click don't
update. Is this a bug? and if it is how can I resolve
this issue?

It will help if you give examples of exactly what is updating, and what steps
you take prior to it doing so.
