My colleague is leaving the company soon and he has asked me to clear all
the emails out completely without a trace. No chance of recovering data
that is sensitive.

Is this possible, will norton system works help?

Nothing really to do with the operating system. Ask in a group that supports
the mail product you're using.

The information is nothing to do with work and is of good nature.

I understand anything is possible in the DATA recovery side of things, but I
wonder what is the best way to cover our track, software wise.

Nothing malicious.

If the information isn't incriminating, leave it alone. Erasing it will
only be suspicious, and WILL trigger an investigation, the consequenses of
which, probably outweich the consequenses of soeone stumbilng across it.
"Hiding in plain sight" may be the best course. If you want it wiped,
reformat and reinstall windows some time after he leaves, to prepare the
computer for his replacement. Of course, if the email is stored on the
server, it's an exersise in futility.

how about this, my colleague has pictures of shagging his bosses wife, does
that help clarify the situation.
Whats the best procedure to get rid of files in that respect, short of
destroying the drive and making sure?
