I have an Epson Stylus Color 3000 which only has serial and parallel
interfaces. I would like to get the Epson USB to Parallel Smart cable (part
# 2075257) but am concerned about transfer speeds. While I'm sure USB
(12mbps) would be fine for printing at full speed, would the parallel side
of the interface cause printing to be slowed down?

You don't have to use the Epson cable. There are many 3rd party ones
too, although I guess the Epson would be guaranteed to work with your
printer.

I don't think speed would be an issue. USB is more than fast enough for
most priners.
