My printer does not realise that it is out of ink. How can I force it to
change the cartrigde?

I don't mean to be rude but have you tried RTFM?

That's going back a bit, but I managed to find the manual for an 850 and
they - from memory - are the same.
Opening up the front flap and turning on by the front power button should
position the black cartridge in the change position.
For the colour you press the cleaning button (bottom left on the front
panel) which is shown as 3 drips ?
That will position the colour cartridge for a change: very sophisticated :-)
Close up after changing cartridges and then press the eject button, and even
if you don't the printer begins charging after 60 seconds.
