I use Outlook Contacts for addressing my envelopes. At the "Show names from the" field, each time I have to choose "Contacts". It defaults to "Outlook Address Book", which is empty. Is there a way I can change this to not have to click and choose "contacts" each time?

I use hotmail within Outlook as my default program for e-mail, I also use
the Contacts feature, which is shared with Hotmail, so if I go to the
Hotmail website it will be shared with it I also use this contact list with
Word.

Its best you set it from within Outlook as your default contact source.

Which version of Outlook? With the current version, you will probably need
to remove Outlook address book from within Outlook and then re-add it again.
Then ensure that contacts is flagged as an Outlook address book. I have
cross posted the reply to the Outlook newsgroup where the Outlook experts
live.
