I've split my home page up with a table hoping to keep
things more organised, but when I click in some of the
cells I cant get the cursor to stay in them so I can
enter anything. Originally the table was smaller and I
did a Split cells to get extra, and it's the extra ones I
cant select.

What am I doing wrong?

This is a remarkably bug-like feature of FrontPage 2002.
Try using the arrow keys to set the insertion point
inside the cell, and then entering some content (such as
a space). Once the cell has some content, using the mouse
to set the insertion point should work OK.
