Good Day To All. I am using windows mail to access my verizon.net account.
Is there a setting that I can use that will tell windows mail to leave a copy
of the email up on the Verizon server?

AFAIK, there is no setting in the client (Windows Mail) that can do what you
want. Have you contacted Verizon tech support for assistance?
If Verizon offers a web mail service, you can use that to read and respond
to messages on their mail server.
 
To set Windows Mail to leave a copy of messages on the server:

Tools - Accounts - (youraccount) - Properties - Advanced
Delivery
[x] Leave a copy of messages on server

you probably should check the
[x] Remove from server after ___ days

to keep your mailbox from getting full.
 
Tools (ALT if not visible), Accounts, highlight your account, Properties button,
Advanced tab, check Delivery (at bottom) Leave a copy..., and configure the two
options below the check box
