I am providing numerous email files (w/attachments) to someone where I want
to assure that they remain secure. In other words I do not want to give them
the option to alter them. What is the best way to do that keeping in mind
that we are talking somewhere in realm of 2000 emails that need to be
transferred?
 
No such luck.

Once you transmit your e-mail to your sending mail server, you have no
control over their delivery or how the recipient will use that e-mail.
Also, you have no right to enforce anyone to obey a contract to which they
have not PREVIOUSLY agreed, and you sending them an e-mail means no such
contract exists since they cannot agree to it BEFORE they receive your
e-mail. It's not your e-mail anymore.
