email reply question

How do I hightlight just a word or sentence when I reply to an email message? I have finally updated to Outlook from AOL but can't seem to find this option. Currently when I reply to an email, the entire sender's message is sent back.
 
Outlook has no such option, but you can add it with a tool called Email
