A site on safe computing says: make sure you shut off email previewing.
Where is this option in Outlook Exress? Also how likely is it that I'll get
a virus from email if I never click on attachments - I simply read the email
from strangers and then delete it.

IMO very unlikely. I use it but insist all text received is plain txt format
not HTTP.
Tools > Options > Read > Tick "Read all messages in plain text format"
but if paranoid then disable Preview Pane ....
View > Layout > Uncheck "Show Preview Pane"

There could be a problem if there is some nasty html code embedded in the
email that could infect your machine.
I don't use outlook but I'm sure there is an option to turn off html
rendering or to view all messages in plain text only?

how likely? depending on how far behind you are with patches it could
be very likely... there are exploits that autoexecute attachments that
you need to worry about because you use oe...

I only use outlook at work so am not very well versed on OE
vulnerabilities. On top of the above suggestions you need to go around
your OE & Internet Settings (in control panel) to make sure that no
scripts are allowed to execute without at least prompting you first. HTML
email code can have embedded images (visible or not!) linked to a website,
which besides fetching adverts and the like, will also confirm to spammers
that your email address is a valid one. OE can also execute JavaScript
commands and fetch/install all sot of nasties on your machine. I do not
know if you can make OE to suppress such embedded objects (Opera has a
setting for this). I think the M$ IE & OE can be made safer using Internet
Settings and tweaking Trusted Sites(?) Better check on google.

Script Setry could also offer protection:
