When I'm compiling an email, click onto "To.." field to bring up "Select
Name" dialogue box - some names don't appear in my address book list which I
know they do exist when viewed in my "Contacts" address book and these people
do have email addresses?
Default address book I'm using is a Public folder address book. We're using
Small Business Server 2003 and Microsoft Outlook 2003.

If you don't see them appearing in the address book, then it's likely you
haven't enabled the Contacts folder in which they reside as an address book.
Right-click this Contacts folder, choose Properties, select the Outlook
Address Book tab, and check "Show this folder as an e-mail Address Book".

The public address book which contains most or my contacts has the option
ticked for "Show this folder as an e-mail Address Book".
It's only a hand full of contains that don't show up???

Assuming the contacts in question have something defined in the E-mail
field, check to make sure it's a correctly-formed address. I just created a
contact with an address that is not syntactically correct and it does not
show up in the address book. If I fix the syntax of the address so that
Outlook can recognize it as an address, then it shows up.
