email addresses shown on sent mail

how can I stop the full email addresses of individuals, being shown on mail I
send to multiple recipients. Office outlook has the facility to edit this but
I can't seem to do this on mail.

You need to send the overall email to "your email address" and then Blind
copy all other email users Bcc - then the only name shown will be yours.

In a new mail window click View>select all headers.
Put your address in the too line.
Use the bcc (blind carbon copy) line
 
Windows Mail (and Windows Live Mail) will show both the contact name & the
contact email address. You can't change that.
If you send to multiple recipients, and don't want them to see each other's
email address, use the BCC: field.
If you don't see the BCC field, in the compose window, click on View - Show
All Headers.

If you used to put multiple email addresses in the To: or CC: fields in any
other email program, the recipients were able to see each other's address,
whether you saw it or not.

just tried that, the full email address still shows when composing the mail,
will this not be shown when the email is sent?
 
Yes, but only your email address and sometimes the address of the person
who receives the mail. The names and addresses of everyone else on the
Bcc: line will be removed.

If you managed to remove the address of the person you sending the
mail to, the mail would be unlikely to arrive. His or her email program,
not
yours, controls whether he or she sees his or her address.
