You can't edit a category once you've created it. You can however use the
following steps to approximate that.
1. Create your new category.
2. Launch Advanced Find from the tools menu.
3. Select Any Type of Outlook Item from the Look for menu.
4. Click the More Choices tab and enter the old category.
5. Click Find Now.
6. Click Ctrl-A to select All items that you've found.
7. Click Edit, Categories to display the Categories dialog for those items.
8. Assign your new category and clear the old category.
