E-mail Server

Hey guys, i was just wondering how to setup like a E-mail
server on rather Xp Pro, 2003 Server or 2000 Adv Server???

Coz I heard that u can set it up so it can have ur ip for
the actuall sender thingy for example [email protected]
or what eva ip ur server is etc etc...
