E-mail address vs. person's name in "To" field

I've just purchased Microsoft Office and this also now is
our default e-mail system.
The problem is that some of the e-mails I send have the
recipient's e-mail address in the "To" field, and some
have their name/s (and I can't figure out how or why). I
would like to know how to customise this so that I can
have the name in the "To" field. I have fiddled with all
the settings I can find, to no avail. It just does what
it wants!
 
My outlook version was version 6 and we are now using
office 2003. Apologies for not being specific enough.

Then the Display name field is available to you within the Contact Record
just below the email field.

Russ, I've already found the display name field and put
in what I want it to show. In some cases it still shows
an e-mail address, not the display name, when I write to
them. I'm sure it's something simple. should I be pushing
the "save and close" button or something? One friend
replied to an e-mail today and the "To' field finally
displayed his name for the first time after the reply!

You enter what you want the display name to be and hit Save and Close.
