Duel Language Documents

Is there a way to set word to always accept a document when the first
word can be either English or Spanish, then subsequent parts of the
document can alternate between the two languages.

My normal template is set to English, claro.

Was the subject of your post a Freudian slip? Duelling seems to cover the
issue quite nicely ;)
Provided the relevant text is formatted in the appropriate language then you
can have as many languages in the document as you need. It might be worth
setting up a Spanish character style to aid formatting.

how would one go about doing that. It's a pain always having to set a
single paragraph to Spanish when I know Word can recognized a language
based on the first word in a doc.

Rule: Whether you have a valid argument or not, it's always important
to insult the other person.
 
For a start turn off the language option to automatically detect the
language (tools > language > set language in Word 2003 for example).

Select some text formatted with the Spanish language. Then click the AA
symbol at the left end of the formatting toolbar (Word 2003) and create New
Style. Set the type as a Character style. And save it as (say) Spanish Text.
Assign a keyboard shortcut and then use that style to apply the Spanish
proofing to text in your document.
