I have not found anything that shows me how to use Remote Desktop in a dual
monitor environment.
Having dual monitors for software development is beginning to be a
productivity requirment. I have two monitors at work and two monitors at
home. I can get full use of my home monitors while connecting to my work pc,
I just can't stretch my work PC desktop beyond one monitor. Is there a way
to do it, and if not, does anyone know if Microsoft is planning on including
this in future releases?
Thanks

You cannot.
Use VNC.
I have no idea about the future.

Did you ever figure out how to get your dual monitor set up to work when
you're hooked up to the network at work? I'm having the same problem, but I
know it can be done because others at work have a dual monitor set up at
their homes.
