Is there any performance advantage of dual core chips over dual
processors? Or is the advantage strictly on the $$$ side of things?

You are right. It's simply a dollar difference. Cheaper CPU and cheaper
motherboard for the dual core chips.

As I understand it, the bandwidth between processor and shared memory
cache and, in AMD's case, between the processor and the memory
controller can be much much higher if they are all on the same chip.
