Drive fills up with copies of files all by itself.

I have a strange problem on one of my servers, it seems that a drive
is filling up with copies of data already on the drive.

Let me explain.

Lets say that the drive has c:\stuff. It is also shared as Stuff. C:
\stuff has sub directories that are c:\stuff\things c:\stuff\that etc.

the next day I log onto the server and c:\stuff has a directory called
c:\stuff\stuff and so on. In addition to this added directories are
sometimes undeletable and they are marked as system.

this server has symantec backup exec and is configured to backup to a
usb hard drive.

Any ideas on what is causing this?

Sounds a bit like the Symantec backup `playing up`.
Switch off the scheduling of it for a day or two to see
if it cures the problem.
Symantec is sh*te.

Make sure it's not linked as C:\Stuff and likewise copies are not being
restored to c:\stuff, ie, restoring c:\stuff to C:\stuff recreating
folders under c:\stuff.

Things that appear that are undeletable or very often spyware.
