I am building a site for a client and he wants users to be able to listen to
his music and also download tracks.

Can anyone guide me through how to setup download links for not only MP3s
but text files?

Zip the files, and link to the zips.
Text files will almost always open in the browser, and music files
will almost always play in the browser (or open a media player),
unless they are zipped.
Alternatively add a note near the link to the effect "To Download:
right click and choose Save as", but check the wording for all
browsers and operating systems (IIRC, Macs do not have a right click
facility)

According to Apple's web site, its Mighty Mouse
has the following features:

"Touch-sensitive technology under Mighty Mouse's
seamless top shell detect where you're clicking,
transforming your sleek, one-button mouse into
a two-button wonder. But the innovation doesn't
end there. Apple engineers added force-sensing
buttons on either side of Mighty Mouse that let
you squeeze the mouse between your thumb and
finger, activating Mac OS X Tiger Dashboard,
Exposé or a whole host of other, customizable
features - instantly."

Apple is always inventing something. Now they've
invented the two-button mouse. Good for them.
I don't know if Apple enabled right-click technology
in Apple OS X Tiger. If not, it will likely appear
in the next OS--OS X Donkey.
