Double CPU Count

My CPU Usage Counter and the Processor entry in System Summary indicate
TWICE as many processors as I really have. Any ideas why and how I can
correct?

Most probably you've got CPU(s) with logical processors (such as the
hyperthreading P4/Xeon).
The CPU count is collected at boot so it's not easy to have it 'go wrong' -
it's not a static entry from install. If you haven't got hyperthreading CPUs
or the count's wrong in some other way then I'd suspect your BIOS has a
sense of humor. What (if anything) do you get on your POST screen/BIOS
setup?
