.... read through a folder full of files (preferably .doc, .rtf or
..xls) and compare with the fonts installed on a system to produce a
list (either on screen or as a text file) showing either (a) a
complete list of fonts that those files use or better yet (b) all
fonts said files use that are NOT installed on the machine in
question?

Reason I ask is that I often move Word and Excel files between
machines and don't always have the same set of fonts available on each
machine. I _do_ have a shocking collection of fonts on one of these
machines so that I am almost certain to have the needed font there
somewhere but since the machines are in two locations most of the time
it's not easy to simply copy said fonts to a CD-R or floppy.

The closest tool I know is FontList of Raymond Mercier:

It will not scan a folder and won't check *.xls, either. But it *can*
be used to get a quick overview of all embedded and needed fonts in
*.doc/*.dot, *.rtf, *.wri, *.wpd files. Maybe you can find a better
program if you start a web-search including the name Mercier. Please
let us know if you succeed.

Useful tool. It did not show in my context menu (when pointing at doc
files) after installing it. Did not bother to figure out why. Used the
old PC-mag ConextEDit
<ftp://ftp.externet.hu/pub/mirror/sac/utilfile/cnxtedit.zip> and added
it "by hand". Would be nice to have a similar tool that can handle
more formats, say like Open Office files.

Just embed your fonts when you save them... In Word, do this,
Tools--->Options--->Save---> Check "Embed TrueType Fonts"
