displaying contacts from new mail address book

When I want to choose a contact from the address book from a new email or to send a fax, some of the contacts are listed by their first names and some by their last. I have been through each one to make sure the diplay as field is correct, and if I go directly into contacts I can find them all by last name. This is the option I have chosen. How can the contacts be viewed by last name only through the email and fax address books. They should be the same surely? Also, when going directly into contacts, how can I quickly go to a contact without scrolling through the letter?
 
Depending on your version and mail support mode of Outlook, you can sort the
Outlook Address Book this way (check for your mode on the second line of the
Help menu > About):

97, 98/2000 in Corporate/Workgroup mode:
Tools menu > Services > Highlight the Outlook Address Book service > Click
Properties > Set sort order

98/2000 Internet Mail Only:
Tools menu > Address Book > View menu > Sort by

Outlook 2002:
Go to Tools > E-mail accounts > View or change existing directories or
address books > Outlook Address Book > Change. > Set your sort order there
